Two Cheese Spinach Bake

Ingredients
1.3lb
fresh prepared spinach leaves
454g
carton cottage cheese or ricotta cheese
4
Eggs
salt and freshly ground black pepper
1tbsp
fresh thyme leaves or 1 tsp dried
¼tsp
Grated nutmeg
6oz
Gruyère cheese grated
Method
1)
Cook the spinach, drain and chop, cool slightly.
2)
Beat together the eggs and cottage / ricotta cheese in a large bowl.
3)
Stir in the thyme, nutmeg cheese and the cooked spinach, season, pour the mixture into a oval gratin dish.
4)
Bake at 180ºC (350ºF) gas 4 for 50-60 minutes. Serve with a crisp green salad and potatoes.
